I am not an enchilada fan. When i found this recipe (doing WW), I now love enchiladas. But only this recipe. I make extra sauce and freeze for fast future suppers. My family loves it also. I do have to turn down the heat a lot, but it is still delish. I have made it for several years now.

Really good, I used chicken thighs. The sauce was great, I like it spicy so I used a little extra chipotle in adobo sauce.
