Shredded Brussel Sprout Salad with Lemon and Oil

Pictured below with crispy oven fried pork chops that I am sharing tomorrow, look out for them, they are so good!

This raw shredded brussels sprouts salad is so simple to make, even a 4 year old can do it (with Mommy's help). Tossed with a little olive oil, lemon juice, salt and pepper, it makes a wonderful side dish to any meal, and my family loves it!

I’m just going to put it out there and say this recipe was developed by my youngest daughter Madison. She loves her veggies raw and loves a raw cabbage salad so one day while I was cutting my brussels sprouts preparing to saute them, she started picking at it. Then she asked me to give her oil and vinegar (she likes making her own salads) and I realized she was onto something. I really love to let her invent and do her own thing in the kitchen, even if sometimes her ideas are a bit… lets say overly creative.

I never knew how good Madison was in front of the camera until yesterday when I thought it would be cute to film her making this after school – she’s a natural and may be taking over Skinnytaste someday, who knows! Sometimes she does this with lime, and apple cider vinegar, and sometimes all of the above. Here she wanted to use all three. This salad is vegan, paleo, dairy-free and gluten-free.

Serving Size: 3 /4 cup

Ingredients

  • 6 oz brussels sprouts, washed
  • 2 tbsp olive oil
  • juice of 1 large lemon
  • kosher salt and fresh cracked pepper, to taste

Instructions

  • With a large sharp knife, trim off the stems, cut the brussels in half lengthwise, then place cut side down on the board and finely shred the sprouts.
  • Place in a large bowl and toss with olive oil, lemon juice, salt and pepper to taste.

  1. Loved the idea of using brussel sprouts as a type of raw cabbage. There are 2 of us in our home, and we use a total of 3 brussel sprouts (shredded, then split between us) per meal. Will consider this when I want some other cabbage slaw dish but don’t want to buy a whole cabbage head or a package of shredded cabbage!

      I always cut them by hand, I don't know how it would be in the food processor but I am SO happy you liked it!

    I also love Brussels Sprouts. Your daughter is so cute in this video. I love how she licks her fingers and the lemon/lime. Also, her creativity with food, making it her own as they say. And so polite to thank you for opening the bottle of vinegar for her.

    Strange thing, I never thought of eating Brussels Sprouts raw. I don't know why. I think this would be so good. Thank you for sharing it! I'll watch for the oven fried pork chops. Pinning it!

    We do a similar b sprout salad with a few dried cranberries and slivered almonds. Sometimes it is with a mustard-y dressing, sometimes with a green onion dressing. I will have to try Madison's version.

    For those of you who don't THINK they like Brussels sprouts, when they are prepared this way (and the way Jules The Norweegie above says about sauteing them to soften them) they are a whole different vegetable. The same with roasting them with olive oil and garlic until they are browned and serve them with a drizzle of balsamic vinegar. Even people who don't like b sprouts find them delicious.

    Madison is adorable! Definitely a natural at both cooking and talking in front of the camera 😀 And the salad looks delicious! Brussels sprouts are so easy to dress with simple dressings to make it taste more delicious. When I shred them, I like frying them just a liiittle bit to soften them up 🙂 I might have to try Madison's recipe next time 😀 x

  22. that's not sugar, it's salt. and it says in the post that sometimes her daugher uses vinegar, sometimes she uses other items. she says that in the video her daughter decided to use all of the ingredients that she likes. i think the post is highlighting the versatility of how you could make the salad.

        Hey Gina – interested in this recipe you said shredded Brussel sprouts. Is this done on a grater or Cuisinart gadget or chopped thinly with knife? – hope this email you can see refers to the RAW shredded Brussel sprouts lemon and oil recipe. Those little suckers on a grater would be close to shredding your fingers – (like dealing with ginger on a grater) – love it but not the grader/fingers part. thanks for you technique tip Love your on0line photo btw.
