These jalapeño poppers are so good and real easy to make. The perfect hot appetizer for watching them game or getting together with friends. Prep them ahead and bake them just before you’re ready to serve. They should be served hot, so don’t bake them ahead.

How To Make Buffalo Chicken Jalapeño Poppers

The buffalo chicken filling is easy! You can use leftover chicken breast from a rotisserie chicken, or cook it yourself in the slow cooker. Just cover with water or chicken broth and cook 4 hours low, then shred. Add some cream cheese, hot cayenne pepper sauce and scallions and mix them all together! Stuff them into jalapeño halves, bread and bake! They are mildly spicy, and so good!

Variations and Tips

  • To make these jalapeno poppers low-carb skip the panko and wrap them with bacon instead.
  • Wear Gloves – please do yourself a favor and wear gloves when you cut the peppers. And don’t put your hands in your eyes or mouth after, it will burn.

I love jalapeño poppers AND buffalo chicken so I decided to combine them both and really spice things up!

Ingredients

  • 10 jalapeño peppers, sliced in half lengthwise
  • 4 oz 1/3 less fat cream cheese
  • 3 medium scallions, green part only, chopped
  • 2 oz shredded low fat sharp cheddar, I used Cabot 50%
  • 4 oz shredded chicken
  • 1/4 cup Franks Hot sauce, or any buffalo wing sauce
  • 1/2 cup egg whites, beaten
  • 3/4 cup panko crumbs, or gluten-free panko
  • 1/8 tsp paprika
  • 1/8 tsp garlic powder
  • 1/8 tsp chili powder
  • pinch salt and pepper
  • cooking spray

Instructions

  • Preheat oven to 350°F. Spray a sheet pan lined with parchment or foil with oil.
  • Wearing rubber gloves, cut peppers in half lengthwise and scoop out the seeds and membrane.
  • Combine cream cheese, cheddar and scallions in a medium bowl. Mix in shredded chicken and hot sauce.
    Buffalo Chicken
  • Combine panko, paprika, chili powder, garlic powder, salt and pepper in another bowl.
  • Fill peppers with chicken cheese filling with a small spoon or spatula.
  • Dip peppers in egg, then in panko mixture to coat and place on prepared baking sheet.
  • Spray the peppers with more oil and bake until golden, about 25 to 30 minutes.
  • Remove from oven and serve immediately. Serve hot, make 20.

  1. Made this for the superbowl with one modification. I can’t do traditional breadcrumbs so I skipped the eggwash and just “rolled” them in almond flour cracker crumbs. They were a hit and nobody knew the difference! Thanks for a new go to appetizer!

  3. It was so good and TIP I use shave off SEEDS mixed with cream cheese and cheese chicken etc the better cuz of more spicy try it IF without SEEDS less spicy as for me no spicy cuz I had strong tongue LOL …

    Excellent recipe… however I must have been blessed with giant jalapeños, because it only made me 7 poppers. I also mixed the spices in with the  filling. Absolutely delicious!

  7. Can these be cooked using your Skinnytaste air fryer by Vremi and if so what temp and for how long?

      1. Do you dip the whole pepper with the meat side into egg wash? The vm video looked like just pepper side was dipped.

  11. These are amazingly good! These or your regular jalapeño poppers are a weekly staple for football watching. They freeze well to, just reheat in oven.

  12. I modified the recipe a bit to make it vegetarian. I left out the chicken and egg whites, and just patted the bread crumbs on top of the cream cheese mixture. It turned out great and was delicious!

  14. I made these this weekend and they were amazing. I went a little crazy and instead of the bread crumbs, wrapped in bacon. I guess it sort of defeated the "skinny" part but SO amazing.

    So incredible! I wanted to make wings & poppers for the Super Bowl …but came across your recipe at just the right time (this seriously somehow always seems to happen). Only breaded the tops and made homemade breadcrumbs from a loaf of leftover whole wheat french bread from dinner last night. Turned out perfect, and they were a HUGE hit for my Super Bowl gathering!     I prepared these last night for baking this evening! I skipped the egg and just sprinkled some panko bread crumbs on top. I was worried that the filling would fall out if I tried dipping them in the egg. Did you have any issues with dipping?

  23. Do you think these could be made lower carb by leaving off the egg and panko crumb mixture. Would this work?

    1. Leaving off the egg won't make it lower in carbs, however, you can use crushed pork rinds instead of bread crumbs.

    These look like they'd be a great lunch too! 2 of these poppers with a piece of fruit, maybe a cheese stick and/or some veggies, would make for a very filling and satisfying lunch.

  25. I've been looking for a healthy Super Bowl recipes, and these look perfect! Have you ever tried stuffing sweet mini peppers with hummus instead of cream cheese? My local grocery story offered samples of hummus-stuffed sweet mini peppers last summer, but I lost the recipe and would like to try it at home because my husband doesn't eat dairy.

  26. Arby's used to have jalapeno bites with some sort of sweet berry sauce for dipping. Now that I have this perfect recipe for a delicious popper, I need to think up a sweet sauce that still fits in with my weight watchers diet!

  28. These look great. I'm curious if you think it work work and possibly reduce the calories further to use laughing cow cheese instead of the cream cheese?

    1. Well that depends on whether you want it to be healthy or low-cal. Big difference but people seem to equate one with another.

      Laughing cow is not even real cheese…it's not far off from Velveeta or Cheez Whiz but people seem to think it's a good alternative just because it's low cal.
