This recipe is perfect for a busy weeknight because it’s quick to prepare and only requires one pot for cooking. Plus, it’s packed with flavor from the sausage, spinach, and corn, and the orzo adds a satisfying and creamy texture. I love one pot meals so much I wrote a whole cookbook with one pot dinners! My husband and I have traveled all over Italy (it’s one of our favorite places!) and we just love easy Italian pasta dishes like this orzo that combine simple and fresh ingredients to create something so irresistible.

Italians put so much passion and love into their cooking, and you can really taste the difference! Our favorite restaurants in Italy also use the highest-quality ingredients that are sourced from regenerative farms that are healthier for humans, animals and this beautiful earth.

And when I cook at home, I do the same! For this dish I used organic produce and certified humane sausage from a local regenerative farm (for more on regenerative agriculture check out the awesome film Kiss The Ground).

It’s amazing how combining just a few fresh and healthy ingredients produces such a tasty and satisfying dinner! I serve this orzo with a big green salad and some Italian bread from my local bakery.

How do you cook orzo?

You cook orzo the same way you would any pasta. Add the pasta to boiling water and cook until al dente, approximately 8 to 10 minutes.

Is orzo gluten free?

Because orzo looks like rice, some people assume orzo is gluten-free, but traditional orzo is not gluten free. Gluten is a protein found in wheat, and orzo usually made from semolina flour, a type of flour that comes from durum wheat. However, some brands, such as DeLallo, have created a gluten-free orzo.

Is orzo healthy?

Orzo and pasta can be a part of a healthy diet. It is a good source of carbohydrates, the bodies preferred energy source, and you can pair orzo with lots of different veggies and proteins to create a delicious and balanced meal.

Instructions

  • Remove the sausage from the casing and add it to a heavy bottom sauce pot or Dutch oven.
  • Cook over medium-high heat for 5 minutes, breaking it up with a wooden spoon.
  • Add the onion and corn (no need to thaw) and sauté for 10 minutes.
  • Add the orzo and chicken broth, stir to combine then bring to a boil.
  • Reduce heat to medium low and simmer 10 minutes, stirring every few minutes and scraping the bottom of the pot to make sure the orzo doesn’t stick.
  • Remove from the heat, add the spinach, stir and cover for a couple minutes, until the spinach has wilted.
  • Top with freshly grated parmesan and black pepper, to taste and serve.

    Made this last night and our whole family thought it was great! I am a vegetarian, so we used Beyond Italian sausage and I also used an entire bag of baby spinach, but other than that kept the recipe the same. I’ll definitely be making this one on repeat.

    Loved it. I subbed peas for corn and used Al Fresco roasted garlic chicken sausage rather than Italian sausage. I used about 2.5 cups of broth and 1/2 cup of Parm cheese and it was perfect.👌🏻👌🏻👌🏻👌🏻

  16. This was really good and super quick and easy. Used Kroger’s Simple Truth turkey sausage. Added garlic with the onion. Would possibly double next time to have leftovers.

  17. Another keeper! The chicken sausage I had was already cooked, so I just didn’t cook it as long at the beginning. Trust the portion size! It tastes so good that I wanted more, but it’s really filling!

  18. This was pretty good. I must have done something wrong- I had WAY too much liquid. I had to scoop out a cup because it was looking like soup. I did add cut zucchini, so maybe that was it. I liked how easy it was to make. For the 3 of us, we have plenty of leftovers.

  23. Delicious! My husband and I enjoyed every bit of it. I also added mushroom and canned diced tomatoes to bulk the recipe up a bit. Didn’t have any orzo on hand but did have leftover cooked white rice. Just omitted the broth and it still all came out creamy and perfect!

  26. Easy, tasty one-pot meal. Aldi didn’t have chicken sausage this visit, so I used mild Italian sausage. This is so good and so easy! Another recipe to add to the rotation.

  27. So good! I used canned corn instead of frozen. I used less chicken broth because I added in a can of rotelle diced tomatoes with chiles, and some chopped red and orange pepper. Gave it a nice taste.

    I made this last night for dinner. Definitely a keeper recipe! My husband loved it, he even went back for a second helping. I served it with fresh cantaloupe. Yummy!

      So this was delicious.

      I did modify a bit.
      Added mushrooms and grape tomatoes instead of corn because that’s what we had. Also added spicy sausage, fresh basil and oregano.

  43. Yum! This was delicious! The only chicken sausage I could find was Al Fresco chicken sausage (I used sweet Italian style.) This gave it a nice kick! After reading other reviews, I added in a zucchini. You could also add a bell pepper, or anything you prefer to increase your veggies. I also added 1 tsp. minced garlic. I will definitely be making this again! Thank you for sharing!

      I used Jovial orzo with cassava flour to make it healthier. Worked great! I also had a liquid issue..

    I followed the directions to a tee and everything was cooked perfectly. But I was not a huge fan with the flavor combination. I would love to try this method with alternative ingredients.

  59. Very tasty and pretty easy to cook. I couldn’t find any chicken sausage at my time of shopping so I went with turkey sausage and added fennel seed for more of a sausage flavor. Will definitely be making again.

Made this in my Instant Pot since we are currently experiencing a power outage after an ice storm (our generator only powers some household essentials like furnace/AC, sump pump, well pump, fridge/deep freezer and a few plugs to charge things). Sautéed the sausage and onions dumped the corn and orzo in, added broth to just cover, set to high for 3 min. Natural release then added spinach, Parm and seasoning! Yay quick dinner!

  72. This recipe was super easy to throw together, and it came out DELICIOUS! I used hot Italian poultry sausage for a little kick, and 2.5 cups of broth instead of 3. I also found I needed to simmer for an additional 10 minutes in order to reduce the liquid. Will definitely make it again!

  75. Really delish! I used some fully cooked chicken sausage that I purchased at Costco. Add a little olive oil heating up the chopped sausage. Figured it would need a little fat since it was already cooked. The spinach was from my garden and was a great addition! I used my own homemade chicken stock (Ina Garten’s recipe) and that always gives a much richer flavor than just low sodium chicken stock. It’s pretty low in sodium to begin with. I’d make this again! Cooking the orzo like risotto is the way to go! Just takes a little more time than 10 minutes- more like 20.

    Great meal – so easy and quick! I made it the first time exactly as written but didn’t have the right ingredients the second time (only had chicken apple sausage, fully cooked), so I used the recipe as a base. Subbed the sausage I had, added garlic and about a teaspoon of thyme with the onion and corn, and deglazed with 1/4 cup of dry white wine before adding the chicken stock. Everything else (orzo, spinach, stock) was the same. So good! I realize that’s not the recipe, but sharing it herer to say that this is a great foundation for lots of combinations and a very forgiving recipe!

  86. Can rice be substituted for the orzo? I made this recipe and it was good but still had liquid. But I did use frozen broccoli bits instead of spinach and I used canned corn instead of frozen. I think I would like this dish better with rice. Any suggestions

  87. We enjoyed this! I added a little crushed red pepper flake, (which I always do when using mild/sweet sausage in a recipe), when adding the corn and onions. Use plenty of fresh ground pepper!

  89. So tasty and easy to make. I used what I had on hand; canned corn instead of frozen, frozen onions and spinach instead of fresh. Cut down on the broth to account for the extra water that came off the frozen veggies. So good I forgot to add the cheese! I will definitely make this again.

  90. Very good! I used the roasted garlic chicken sausage links from Trader Joe’s. I added some diced red pepper as well to use it up. Very good and creamy; it did take about 30 minutes to fully absorb all the liquid but as long as you know that going in it’s totally worth it!

  91. This was super tasty! And it was easily adaptable to what we had on hand/at our grocer. We ended up with a sweet Italian sausage, small pasta (out of orzo) and 1/4 cup of mozzarella & provolone blend because I didn’t fresh Parmesan

    Used lean pork mild Italian – all I could get. No corn but chopped a bit of red and yellow sweet pepper – delicious and creamy

  98. This was really flavorful but like others it was very soupy and I cooked it down for quite a while. I also could not find (went to 3 stores) Orzo so I ended up using Israeli couscous and it was great.

  105. This was one of the simplest recipes to make, but the flavor is incredible. It’s hard to believe that just a few basic ingredients can turn into something so delicious! It was a bit soupy when I turned off the heat, but after sitting a few minutes it was perfect. This will definitely go into my dinner rotation!

    So I had to sub out the orzo for brown rice. Lets just say it didn’t go super well. Even after cooking like triple the time it says and adding liquid the rice was still crunchy. I gave 4 stars because it tasted great and I’m sure will be very good the next time I make it with orzo. Moral of the story, don’t do this recipe with brown rice.

  111. My family thought this was a weird combination- but we all loved it. I used gluten-free orzo and it took twice as long to cook and I had to add extra splashes of broth before it was fully cooked. Next time I think I will prepare brown rice separately and add it to the skillet at the end with a little broth to make it saucy. Also a very flexible recipe to be able to use what’s in your fridge.   112. This dish was very easy to make and it was enjoyed by my entire family. I followed the recipe without substitutions, and it turned out sweet and creamy. I used mild Italian chicken sausage, but if you prefer your food to have a little kick, I’d suggest a medium or hot sausage. Delicious and so simple!

  113. I used Jennie o lean ground Italian turkey instead of chicken.  It was a very comforting dish!  The whole family enjoyed it.  

    I used 4.5 cups of broth when doubling the recipe.  Turned out great.

      Sure you can but the overall consistency won’t be the same since the pasta is bigger pieces. May use less broth then add if needed.

  115. Excellent! I used smoked chicken sausage because that’s what I found in the store, and I left out the corn. Very good and very easy to make. Husband loved it. I’ll be making this one again.

  116. Excellent, delicious recipe and so simple. The only change I made to the recipe was to double it since I needed to serve more than 4.. I will definitely make this again but, if doubling, I might not fully double the amount of chicken broth used. I love these one pot meals!

This recipe was incredible!  I was looking something quick and always gravitate to one-pot for meal prep/planning.  It was so simple, I didn’t have high expectations on the flavor, but it was so creamy and hearty with no added salt!  The starch from cooking the orzo in the pan makes it really creamy and the corn adds a nice sweetness.  I used pre-cooked Italian chicken sausage since my market doesn’t carry the fresh, and I cut it in 1/2 circles and browned it in the pan first.  It’s key to keep stirring, at least when using the Le Creuset as recommended to avoid sticking.

  120. I was determined to make this dish.. I had to make some substitutions but I made it happen!

    Did not have sausage: used turkey but added seasonings to make it like Italian sausage.

    Did not have chicken stock: used Better than Bouillon vegetable broth

    Did not have spinach: used kale.

  122. i accidentally purchased macaroni instead of orzo, and the recipe still works incredibly well! super easy week night meal. I added in some old cherry tomatoes (when the pasta went in) and they added a nice additional flavor

  124. Easy, fast, and tasty meal! Love the one pot recipe, which made for fast clean up for a weeknight, too.  This meal is a great example of how versatile orzo is.  I topped it with some grated parmesan and red pepper flakes.  My husband also loved it and had multiple helpings!

  125. Hi everyone! This was my first time ever cooking orzo, and it was a very very easy recipe to follow! I followed it to the letter, and it resulted in a very delicious simple dish. I use frozen corn and a pack of frozen spinach that I had handy, and this came together in about 40 minutes as the recipe states. my one year-old seems to like it so far, so it’s pretty exciting! I talked mine with some crushed red pepper, Parmesan, and fresh ground black pepper, and I was very happy indeed!  I will definitely be making this again!

      1. Very good! I only had pork sausage so I added Italian seasoning, parsley and garlic powder and red pepper flakes to get close to recipe and used what spinich I had. I had skeptics but doubled recipe to feed 4 adults and its all gone! Always trying new ST recipes and always good.

    1. This will freeze well as the pasta is small, I always freeze recipes that have small pasta, when it’s a larger pasta I do not like the texture when is defrosts.

    1. Chard would work for this recipe but you might need to cook it longer. I would parboil the chard so the corn doesn’t get overcooked.

  135. Family just adored this. I doubled the size & used pork sausage instead of chicken.  Added a bit of garlic powder and crushed red pepper. It was savory, hearty, delicious without putting us in a food coma. 
    Kids were in line for seconds. We had one serving left and flipped a coin on who gets it for lunch. It was THAT good! 
    I will 10/10 make this again. 

      1. Can canned corn be used instead of frozen? And if yes would it be the same amount as I never really have frozen corn on hand.

    1. Hello – the sausage I used is chicken sausage as it really gives the dish a lot of flavor. You can try it with chicken, but you’ll need to add some salt or flavor.
