This easy black-eye pea recipe that uses canned beans is a great way to use leftover ham. The ham bone gives this dish, which is somewhere between a stew and a soup, so much flavor. Whenever we eat ham for the holidays, I always freeze the bone and some ham for future recipes. This delicious black-eyed pea soup puts those leftovers to good use. On New Year’s Day, it’s tradition to eat black-eyed peas for good luck and collard greens and cabbage for wealth and prosperity. So, this meal packs a triple punch of all good things for the coming year!

Are black-eyed peas healthy?

This healthy black-eyed pea soup is loaded with fiber and is relatively low carb. Black-eyed peas, which are actually beans, are an excellent source of fiber and protein and full of vitamins and minerals. Plus, you get extra protein from the ham and plenty of nutrients from the collards and cabbage.

What to Serve with Black-Eyed Peas

You can add brown rice to this black-eye peas dish if you wish, but it’s great without the rice too. You could also serve a salad on the side to round out your meal.

How to Store, Freeze, and Reheat

This black-eyed pea soup can be refrigerated for up to four days or frozen for up to three months. Thaw overnight in the fridge and warm in the microwave or oven to reheat.

Ingredients

  • 1 Tbsp olive oil
  • 1 leftover ham bone plus 2 cups diced ham, 10 oz
  • 2 medium yellow onions, chopped
  • 3 stalks celery, chopped
  • 1 tsp kosher salt
  • 7 cloves garlic, minced
  • 2 cups low-sodium chicken stock or water
  • 1 small head cabbage, 1 1/2 lb, chopped
  • 1 bunch collard greens, stemmed and chopped (12 oz stemmed)
  • 1 ½ tsp freshly ground black pepper
  • ¼ tsp cayenne pepper, optional
  • 2 15-oz cans black-eyed peas, drained and rinsed

Instructions

  • In a heavy-bottomed pot or Dutch oven, heat the oil over medium.
  • Add the onions and celery with the salt and cook until the onions are translucent and browned along the edges, 10 to 14 minutes.
  • Add the garlic and saute for another minute, just until fragrant.
  • Pour in the stock and add the ham bone, ham, black eyed peas increase the heat back to medium-high, and bring to a boil.
  • Stir in the cabbage, collard greens, black pepper, and (if using) cayenne pepper.
  • Turn the heat to medium, and cook, uncovered, until the greens cook down a bit and start to become tender, 15 minutes or so.
  • Partially cover, reduce the heat to medium-low, and cook 25 minutes, allowing the greens to cook down further and the stew to come together.
  • Remove the bone.

  1. I have to say I was hesitant on how this would turn out, but wanted to give it a try at least before I dismissed it, especially with it being a supposed New years tradition. Boy I’m glad I gave it a shot because it is delicious! I didn’t have ham hock, so i put some slices of bacon for flavor and diced up the black forest ham sandwich slices I had and it totally worked!

  2. This looks delicious! I no longer eat pork or beef but will try with smoked Turkey wings. The smokey flavor usually mimics the ham bone flavor quite well. Thanks for another great creation to nourish our body!

  4. We liked this one, I made about 1/2 of a recipe to have 4 serving, and did the collards etc in the pressure cooker, minus the ham. Followed directions with adding ingredients. Added 1 cup broth and cooked 10 minutes high with natrual release. Was just right. We had it with an over easy egg on top, a bacon crumbled over all, hot sauce optional, and sweet potato side. Very good would make again even without the meat. Ham of course would add alot of flavor.

    This recipe calls for only 2 cups of liquid. It comes nowhere close to covering the ham bone.  Am I supposed to add water to it???

    Wonderful use of leftover holiday ham. So good! I really liked the small amount of Cayenne Pepper used in the dish…..really gave the dish an interesting little “zip”

  8. I made this yesterday and it was soooo good! I don’t even like black eyed peas so it’s hard to find recipes I like. My husband said he would eat this all year round!!

  9. This stew was absolutely delicious! Made it today for my New Year’s dinner. Flavors melded so well. Should be even better tomorrow! Definitely a keeper! Think the suggestion for a smoked turkey leg as a substitute for the ham would work well.

    This was really good. I used my instant pot for 15 minutes. I used ham neck bones because they were less expensive.I couldn’t find collard greens, but only found mustard greens. It was all very delicious. I didn’t realize it was a soup/stew til later, but I absolutely ate it up. I think cornbread would have been good with it. I am going to make some tomorrow!! Thank you so much!

  13. This looks really good. I do not have a ham bone, so using some chopped ham, and I’m trying a bit of Cajun seasoning in place of the cayenne.

    1. I had dried black eyed peas. I soaked mine overnight then drained them and rinsed them and added to recipe. So good!

  14. WOW! Looking for something different from the typical soup/stews for a cold & snowy week night dinner and I was NOT disappointed with this stew. It’s delicious! It was so easy to make, light on the budget, and a hit at the dinner table. It’s on the menu for New Year’s at my house.   15. We are hard core dieting for an upcoming trip and working at the last couple of lbs to lose, otherwise I might not have made this. But, there are virtually no points! My husband gave me a look when he saw what was for dinner and I kind of thought the same thing. However, this was fantastic! He doesn’t like beans, but said they really made the dish. I used Turkey ham for even fewer points, and I’m not sure you would know the difference. The hint of Cayenne is brilliant. I will definitely be making this over and over again.   17. This looks great. Any suggestions for someone who doesn’t eat pork. Can you just leave out the ham bone? Or can anther meat be substituted for it?
