If you need a quick dessert that doesn’t require much work, it doesn’t get easier than this! These fresh strawberry, blueberry and angel food cake skewers are perfect for Memorial Day, Fourth of July, Labor Day or any summer party.

I’m not sure what it is about putting fruit on sticks that makes them so appealing, but my youngest daughter’s eyes lit up when she couldn’t wait to eat them.

I wanted a healthy cheesecake flavored dip so I played around with yogurt, cream cheese, vanilla and sugar, and it was exactly was I was looking for. The strawberries tasted wonderful with this dip, it’s a keeper!

Make Ahead

This will feed a large crowd, you can make the dip the night before, assemble it in the morning, and refrigerate until ready to eat.

Variations

  • You can skip the skewers and just serve the fruit in a bowl with the dip.
  • Use a pound cake or gluten-free cake instead.

Serving Size: 1 skewer, 1 tbsp dip

Ingredients

For the cheesecake dipping sauce:

  • 4 oz 1/3 less fat cream cheese, softened
  • 1 cup fat free Greek or plain yogurt
  • 1 tsp vanilla
  • 1/4 cup raw sugar

For the skewers:

  • 14 oz angel foods cake, cut about 1-inch cubes
  • 72-84 medium strawberries, about 3.5 lbs stems removed
  • 1 pint blueberries
  • 24 to 28 skewers

Instructions

  • In a medium bowl, combine the cream cheese with yogurt, vanilla and sugar. Mix well until sugar dissolves; set aside.
  • Thread 3 strawberries and 2 cubes of cake onto each skewer, alternating between strawberries and cake.
  • Finish each skewers with 3 blueberries.
  • Place finished skewers on a platter and refrigerate until ready to eat.

  1. Hubby and son are going to watch the Pats game with their father/grandfather at the nursing home, so I am packing them up with some football healthy goodies. This is one of them, some for them, some for my daughter and I, to eat after I make your Pot Sticker Stir Fry from that amazing Skinnytaste Simple cookbook for the two of us! Can’t wait for dinner tomorrow night, after crafts and building a haunted gingerbread house with my daughter. Just wanted to say, Gina, thank you for your awesome recipes. This one is a huge favorite in our family, along with the delicious brownies made from black beans. Oh, for goodness sakes, we love almost all of your recipes!

By the way, my very picky father-in-law absolutely LOVED the Red, White and Blue Skewers, although I made it into a trifle, cutting up the Angel food cake to make it easier for him to pick up with a spoon. I sent them with a huge container, and wouldn’t you know, there was very little left (after eating all the appetizers, too!!!!!), and son polished it off when he got home. Our family loves you, Gina.   2. This is one of my absolute favorites. I often make it more in a deconstructed way, with the fruit and angels food cake all separate rather than on skewers. My go-to summer desert for the several years since I first tried it!

  3. I cut the recipe in half for a smaller group. Instead of taking the time to make skewers I placed the cake pieces and fruit in a large bowl. Each person could self-serve and top with some of the dip. It worked out so well!

  4. Fabulous dip!! I do not usually change recipes from the onset. However, I did with this one.

    1. I could not find 1/3 less fat cream cheese (my store was out of stock…crazy right??!!) 2. I do not like blueberries, so I used blackberries.

    I ended up using whipped cream cheese. The calorie count per serving is 20 calories less for the whipped cream cheese than the 1/3 less fat cream cheese. I am so glad I used the whipped, because the whipped is lighter (in weight).

  5. Outstanding! I especially love the dip which I now make in batches to keep on hand to use with any fruit dish. The dip is just like Marzetti’s Fruit Dip but nowhere near the calories. I even used 1/8 cup of Pyure Organic Stevia in place of the raw sugar to further save some calories,

  8. use the plain if you are used to it. If you need something a little sweeter (and can have the extra carbs) then go for the vanilla. For me I used the plain Greek. I have it on hand already and am used to the flavor. I also used splenda instead of sugar and had no problem with blood sugar spike.

    1. I want to make this for a bbq. It looks delicious, but I’m concerned about the dip. You could have the ole’ “double dippers”. I’m concerned about sanitation. How about making the dip a little more liquid and pour sparingly on each kabob? No dip bowl?

    I think these are just wonderful! Each Sunday, we visit as a family. (We are Italian!) My little nephew always like to make some kind of special recipe with me to share with the whole family. Some times I make trail mix, some times it's s'mores. I am always looking for something new and healthy for us to make. This will be a great "go-to" for our little chef experiences.
